The story of Les Viviers de Saint Colomban began in 1991, driven by Xavier and Sophie Cousin. An agronomist with a deep passion for the sea, Xavier embarked on shellfish farming in the Bay of Pô, Carnac. From the very start, he understood that working with the sea requires respect, observation, and adaptation. Every tide and every current influences the quality of the shellfish, and to ensure an impeccable product, he established rigorous monitoring at every stage, from seed to market-ready shellfish.

Drawing from his experience, Xavier built strong relationships with a network of specialized producers and shore-based fishermen, all united by a shared commitment to quality. Soon, he expanded Les Viviers’ operations by integrating new services: trading, harvesting, tank storage, transportation, and export.

The goal of this first chapter was simple yet ambitious: to ensure that every shellfish and crustacean arrived as fresh as if it had just been harvested.

Among them, Gaël Cousin, who has been involved in the business since childhood, has led Les Viviers de Saint Colomban for several years. This second chapter, marked by ambition and innovation, reflects his experience within the family business and his studies in marine farming.
